Scallions and Broccoli Mix

Ingredients:

  • 1 pound broccoli florets, roughly chopped
  • 4 eggs, whisked
  • 1 tablespoon sweet paprika
  • 1 tablespoon avocado oil
  • 2 scallions, chopped
  • 1 cup cheddar cheese, shredded

Directions:

Set the instant pot on Sauté mode, add the oil, heat it up, add the scallions and the broccoli, toss, and sauté for 5 minutes. Add the eggs and the paprika, toss, put the lid on and cook on High for 15 minutes more. Release the pressure naturally for 10 minutes, sprinkle the cheese on top, leave the mix aside for a couple more minutes, divide it between plates and serve for breakfast.
