Buckwheat Apple Cobbler

Buckwheat is one of the healthiest grains out there, and is perfect for a rustic
apple cobbler made right in your pressure cooker. Everything cooks together
for just 12 minutes with no oil or fat. Chopped dates help add moisture and
an earthy, nutty flavor that compliments sweet apples.
3 pounds chopped apples
2 ½ cups water
½ cup chopped Medjool dates
½ cup dry buckwheat
2 teaspoons cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1. Mix everything in your pressure cooker.
2. Click “manual,” and cook for 12 minutes on high pressure.
3. When time is up, hit “cancel” and carefully quick-release.
4. Serve right away!
